Pea and Mint Soup

So my second attempt at posting one of my own recipes. I had some family round for dinner and I relied on a bit of Gordon Ramsay cookbook magic for my main and pudding was brought by my aunt, but I knocked together some soup for starter. I love making my pea and mint soup as it is always really tasty and fresh while still being warming and filling. Definitely packs a few of your veg portions for the day in it and good for the waistline. It is also ridiculously easy to make, you can’t really go wrong so I thought you might appreciate the recipe. The stock should add all the seasoning you need, I tend to have a little taste of the stock before I add everything to make sure its salty enough for my taste. You want it to be a little saltier than you would like the soup to be as you are going to be adding lots of veg that will weaken this. You can always add a little at the end if you have misjudged. It’s easy to add seasoning but impossible to remove.

 

Ingredients (Serves 4)

3 large or 4 small onions

450g of peas *

1 1/2 pints of vegetable stock

3 sprigs of fresh mint (I like it minty)

Yup that’s it!

*I use frozen as they keep all their goodness as they are frozen when they are freshest

Method

Chop the onions, doesn’t matter how as its going to be blended later. Put it and the stock in a pan and boil until the onions have softened and become translucent. Add the peas and the mint, only continue to heat for 1-2 minutes as if you overheat at this point it will loose the lovely bright green colour and the fresh taste from the peas. Add the mint and blend until smooth.

As I said, incredibly simple but so tasty and fresh and a lovely spring dish. I have added a little swirl of cream in the picture but that’s just for presentation and not needed if you want to keep the recipe vegan.  It is one of my go to starters for having people over when I’m doing lots of complicated stuff for the main/dessert because you just need one hob and so quick and easy.
